Thirst Quenching Watermelon and Cucumber Smoothie Recipe
What do you fancy after a long bike ride? A cold refreshing smoothie perhaps? Staying in North Belgium, it is compulsory to do lots of cycling and see the WW1 cemeteries, which are surrounded by beautiful countryside. After completing a 35 mile circular route around the town of Poperinge, I returned to find half a watermelon in the fridge. Feeling lazy the thought of actually chopping it up to eat was too much, I just wanted a hydrating drink. So I created this smoothie, which definitely quenched my thirst. Its not the typical sweet fruity tasting smoothie, instead is cool, light, refreshing with a minty aftertaste, the best way is for you to try it and see what you think!
To make this super watermelon and cucumber smoothie you’ll need a high speed blender, I use a vitamix.
Ingredients
5 cups of chilled watermelon
4 inch chunk of cucumber
2 tsp of chia seeds
1 cup of water
3 icecubes
Place all of the ingredients into the blender and turn up to the highest speed for about 40 seconds, making sure all the seeds have been obliterated. As the watermelon is made of 92% water, you won’t need to add much water to it, just 1 cup is enough to create a smooth consistency without watering down the flavors.
