6 Vegan Summer Desserts to Make Your July Perfect!
Where has this year gone? We’re over half way through 2018 already which seems unbelievable. A common problem for bakers during the summer months is wanting to bake, but the usual sweet treats being too heavy on a sweltering day. So, with the days getting longer and the weather warming up (hello UK heatwave!), we here at Baking Time Club have put together a list of seven delicious vegan desserts to help make your summer 2018 one to remember.
Wild Blueberry & Lavender Coconut Ice Cream

The first bake in our vegan summer spectacular is this gorgeous wild blueberry and lavender coconut ice cream recipe. This refreshing ice cream will go down perfectly on a summers day with all the different flavours complimenting each other. Although it requires an ice cream maker, this one is really simple to make is made by using either almond or coconut milk. This recipe can be made in around 10 hours (including freeing time) and will serve 8.
Strawberry Lemonade Muffins

Next up we have these super summer-y strawberry lemonade muffins. Again, these are really easy and stress-free to make and are the perfect light afternoon snack on a lazy July day. We especially like the colours on these! This recipe can be made in around half an hour and will serve 12 (don’t forget to add some lemon peel on top for an added touch!)
Birthday Cake Ice Cream Sandwiches

Thirdly, we have these amazing ‘birthday cake’ ice cream sandwiches. Although it has birthday cake in the title, we see no reason why these shouldn’t be made all year round, and especially in summer when ice cream is often on people’s minds. These are comprised of 2 sugar cookies with a vegan ice cream centre (feel free to get creative with your flavour choice) and finally covered in sprinkles to make them look even more appealing. This recipe serves 10.
Plum & Almond Cake

The fourth summer vegan dessert in our list is this tasty plum and almond cake. This bake is a real show stopper and is perfect for a summer tea party. The plum and almond favours really come through in this bake and will leave your guests wanting more. This recipe can be made in around in an hour and a half and will serve 10.
Raspberry Coconut Popsicles

The penultimate dessert we have for you is a twist on everyone’s favourite summer treat; the popsicle/ice lolly. These raspberry coconut popsicles look and taste great and are perfect if you want something light and refreshing. These dairy free popsicles are topped dark chocolate, desiccated coconut, raspberries and pistachios and provide an opportunity for you to get creative by adding anything else that takes your fancy.
Midnight Mint Mocha Brownies

The final dessert in our summer list is perfect for when the sun is beginning to come down and you fancy something to keep your taste buds tingling. These midnight mint brownies are soft and chewy and so delicious! They can be made in around an hour and 15 minutes and will serve 10-15.
